In the early autumn of 1975, a young Marine found himself stationed in Hawaii, unknowingly embarking on a culinary journey that would span over four decades. Assigned to Marine Fighter Attack Squadron 235 at the Marine Corps Air Station Kaneohe, the young Marine's tour was extended from 18 months to over six years. During a temporary relocation to Naval Air Station Barbers Point, a drive past Pearlridge Mall introduced him to Volk’s Steakhouse. It was there he first experienced a teriyaki sauce so memorable that it sparked a lifelong quest to perfect his own recipe.
Luau Inspiration
In 1976, the squadron organized a grand luau for around 500 personnel and families. Volunteering for the planning committee, he seized the opportunity to experiment with his culinary skills. The highlight was two 250 lb pigs cooked Hawaiian style, accompanied by a variety of traditional luau dishes. The Marine introduced his own twist: 75-80 lbs of thinly sliced beef teriyaki on skewers, marking the first time he prepared his own teriyaki sauce. The dish was a resounding success.
Journey Through the Far East
The following year, the squadron was deployed to the Western Pacific, landing first in Okinawa before moving to mainland Japan and other parts of the Far East. This experience, along with subsequent deployments and a three-year assignment in Japan, deepened his appreciation and understanding of Asian flavors, further influencing his sauce-making.

Over the years, this Marine-turned-sauce-maker refined his recipe, responding to the enthusiastic feedback from family, friends, neighbors, and coworkers.
